RADICE

Radice or Roots is produced using the "Ancestral Method" where the wine goes through a second fermentation inside the bottle, much like in Champagne but without the dosage and disgorgement. This method is often known as "Pet Nat" and is a unique and traditional method which creates an exemplary creaminess in the wine and fine, firm perlage. The sediment in this case is left inside the bottle adding silky texture and volume to this ready and delicious Lambrusco.

Appellation: Lambrusco di Sorbara (the crown cap version is labeled Lambrusco di Modena).

Varietals: 100% Lambrusco di Sorbara.

Vineyard: Il Cristo.

Trellis system: Cordon (cordona semplice and cordone speronato).

Hectares: 15 hectares total for the winery.

Altitude: 25 m / 80 ft.

Type of soil: Alluvial soil of mostly chalk and sand.

Yield: 140 hectares.

Harvest date: Second half of September.

Harvest technique: Hand-harvested.

Agricultural technique: Lotta integrata (sustainable).

Alcohol:  11%
