Growing Location : Castelnuovo Berardenga (Siena)

Characteristics of the Vineyards : Hillside vineyard facing south (280 meters above sea level) in the Chianti Classico area, southern exposure.

Wine-Making Process : Traditional, in stainless steel vats at a controlled temperature (26-28 ° C) and daily (6-9 times) remontage. Additional 10 day maceration on skins at the end of the fermentation process.

Aging : 10 months in small French oak barrels (2 ° / 3 ° shift) additional 3 months in bottle.

Alcohol Content : 14% vol.

Recommended combinations : Cold cuts, grilled meats, medium-aged cheeses.
